Brinjal or eggplant is famous vegetable in Sri Lanka and India.They like to have it either fried or gravy. Brinjal/eggplant is a rich source of dietary fiber which promotes digestion and helps to maintain sugar and cholesterol level in blood.
Ingredients:
Brinjal 250g
Cooking oil 3tbs
Big onion 1
Garlic 3pods
Cinnamon 2inch
Salt
Chilli powder 1/2tbs
Curry Powder 1tbs
Turmeric 1/4tbs
Garcinia (Goraka) 2pods
Curry leaves
Water 1/2cup
Coconut milk 1/2 cup
Wash brinjal well and cut them into 2inch. pieces.
Then add salt, chilli powder, curry powder, turmeric to brinjal pieces and mix well. Keep aside.
Put a pan on the cooker and add oil.
When the oil is hot put onions, garlic and curry leaves.
Then add mixed brinjal to the pan and mix them with cinnamon.
Let it cook in 3 min.
Add garcinia and water.Cover it.
Leave it for 5 minutes for cooking.
When the brinjal pieces are cooked and getting soften, add coconut milk and leave for 3minutes.
