Fried Brinjal /Eggplant Salad



Brinjal     250g

Big onions 2

Green chilli   2

Tomato       1 

Coconut Oil or Canola Oil  (to deep fry) 



Lime 1 



  • Wash all the brinjal and cut them into 2 inch. small pieces.
  • Then add salt and mix well.Keep it for 10 minutes.  
  • After 10 min,squeeze brinjal and remove extra salty water. 
  • Next put a pan on the cooker and put enough oil to deep fry the brinjal.

  • Deep fry all the brinjal pieces until soften and get golden brown.

  • Then cut onions ,green chilli ,tomato into small piece. 

  • Put them to a bowl and mix with brinjal.

  • Finally add salt and pepper to your taste and the salad is ready for you.

  • To get extra taste,squeeze few lime drops.
