Seeni Sambol is famous traditional Sri Lankan breakfast curry made with onion and chili. It is a combination of spicy, sweet and sour flavors. Easy making seeni sambol sandwitch is very popular meal for breakfast among kids and adults as well. You can enjoy seeni sambol with hoppers, roti and roast bread.
2 - big onion
3 tps - chilli powder
1/2 tps. - turmeric powder
1-spring of curry leaves
2 inch- cinnamon stick
3- cardamon pods
1tps - mustard seeds
1 tps - tamarind paste
1/2 tps - salt
2 tps - sugar
2 inch - pandan leaves
4tps - cooking oil
Peel the onions, wash and cut them into thinly slices. Leave aside.
You want a large fry pan for make this.Keep the frying pan on medium low heat and add cooking oil into the pan.You can use coconut oil, vegetable oil or any cooking oil as you like.
When oil get heats,add mustard seeds,curry leaves, cardamon pods and cloves.Mix well and keep about a minute.
Next, add the sliced onions and pandan leaves following chili powder, cinnamon stick, turmeric powder and salt. Stir well and let the onions turns pink and tender. Keep mixing all ingredients well and it helps to onion keep without burn.
Add the tamarind pulp and mix well to combine.
Now add the sugar and mix all well and reduce the heat to low.
Cook for another 10 minutes and take off fire. Keep the pan another place and let it cool.
Yummy seeni sambol (onion sambol) is ready for serve.Enjoy with White rice, roti,hoppers or with roast bread
